Welcome



Have you noticed the falling apart WELCOME mat at the entrance of your front door? The "welcome" letters on mine are not even legible! I love to remember that the wear is from all the little feet, new feet, mail persons, neighbors, and weather that comes to our home. I spent eight dollars yesterday to buy a new WELCOME mat for the front door. I swept the porch and laid down the mat, wondering who will grace our presence in the year to come? Even if there are days when no one comes to the front door, when they do come, they are welcome!

Do not forget to entertain strangers, for by so doing some people have entertained angels without knowing it.

Ginger Quinoa Salad

1/2 cup sliced almonds (toasted)
Saute 1/2 cup chopped white onion in 2 tsp vegetable oil
Stir in and simmer 20 minutes:
2 TBSP fresh, minced ginger
1 cup quinoa
1 and 1/2 cup beet and/or carrot juice
Add for 10 minutes and cover:
1 cup frozen peas
salt and pepper to taste
Stir in when cooled:
1 medium apple, diced
1/3 cup unsweetened, shredded coconut
