Italian Veggie Medley


Italian Veggie Medley

1 tomato
1 small zucchini
4 oz asparagus spears
4 oz oil-packed artichoke hearts, drained and halved (reserve 1 tsp oil)
1/2 small onion
1 roasted red pepper cut in strips
1/2 tsp italian seasoning or 1 TBSP fresh italian spices

Mix all ingredients together, serve over pasta or cooked wheat berries. This is delicious!
