Joy


Mushroom Risotto

1 quart vegetable broth
2 oz. dried mushrooms
1 TBSP olive oil
4 TBSP unsalted butter
1 garlic clove, chopped
1 onion, finely chopped
1 and 1/2 cups risotto rice (arborio)
1/2 cup dry white wine
1 cup fresh grated parmesan cheese
sea salt and freshly ground pepper

Soak the mushrooms in the broth for 10 min. Simmer the broth slowly and remove the mushrooms. Melt the oil and half the butter in a large saucepan. Add the garlic and onion and cook until soft. Add the rice and stir until coated.

Cook the rice, adding one ladle of broth at a time until the rice soaks up the liquid each time, then add another ladle. Do this for 20+ minutes. Chop the mushrooms into smaller pieces.

Add the mushrooms, white wine, remaining butter, and parmesan cheese to the risotto. Season to taste with salt and pepper, cooking 1-2 minutes more.

This is a decadent dish reserved for when you are in the mood to have rich, flavorful food.

  1. great verse....joy....something we can sometimes forget. i always think of a song my parents used to listen to on an 8track - in our old station wagon when i read this verse.
