Reluctance

Whole Wheat Linguine with Braised Mushrooms 
This is super easy and super yummy!

1 pound shiitake or mixed wild mushrooms
3-4 TBSP extra virgin olive oil
1/2 cup vegetable stock
Course salt
2 TBSP fresh thyme
4 cups whole wheat linguine
1/4 cup reserved pasta water
1/4 cup grated parmesan cheese

Sear the mushrooms in the olive oil, then add the stock and reduce completely.  Season with salt.  Add the fresh thyme, cooked linguine, and the water.  Toss and cook for 4-5 minutes.  Season with salt and pepper and serve with grated parmesan.
