5 cups cooked rice (any kind, although I prefer long-grain brown rice, or whole grain rice)
11/2 cups chopped walnuts, toasted
1 large, tart apple
1/2 cup chopped green onion
1 large carrot, grated
1/2 cup minced fresh parsley
Dressing: 1/3 cup lemon juice
2 TBSP honey
2 garlic cloves, minced
3/4 tsp salt
1/2 tsp curry powder
1/2 cup olive oil
Combine the first six ingredients. Combine the lemon juice, honey, garlic, salt and curry powder. Whisk in the oil and drizzle over the rice salad.
