Curried Cauliflower Soup
1 head of cauliflower, in florets
1 small white onion, chopped
1 carrot, peeled and chopped
1 stalk celery, chopped
2-4 TBSP curry powder
4 cups vegetable broth
salt and pepper to taste

In a 2 quart pot, cook the onions in a TBSP of oil until translucent.  Add the cauliflower, carrot, celery, and curry powder and cook for 2 more minutes.  Add the vegetable broth and boil until all the vegetables are soft.  Place the mixture in a food processor and pulse until chunky.  Return to the pot and add salt and pepper to taste.  This soup can be served warm or cold.  We ate it on a warm summer day with a dollop of sour cream and chives.  The aroma in the house was amazing!

I have been taking some time to compile new recipes.  I mostly use fresh ingredients, limit my flour and sugar use, and try to cut out dairy and meats, or use them sparingly.  Many of you have asked me what the best diet is for maintaining weight and increasing energy.  I have read research and tested what is best for me and my family.   I feel that this is the best way to eat.  Add this way of eating to daily exercise and spiritual growth and you are on your way to feeling better.
